Vacherin Part Deux

A few days after our last post about Vacherin Mont d’Or...disaster struck! Food time for four, and the cupboard was bare!

But in the fridge was one fresh cauli and a very ripe Vacherin. Necessity+hunger=inspiration.

RECIPE Quarter cauli and dribble some olive oil or melted butter over it. Season with salt and lots of black pepper. Cut rind of cheese into a cross to keep away any evil Halloween spirits. Stick both into hot oven for 20 minutes or so. Serve by putting a quarter cauli on four plates and ladeling over a quarter of the cheese, not forgetting the lovely chewy, slightly caramelised rind.

Delicious! And we christened it Cauliflower d’Or.
